The weeknight steak dinner that fits on one tray. Skirt steak + baby gold potatoes + green beans + mushrooms + onions, all coated in garlic butter, roasted under a broiler finish for caramelisation. Olivia is Brazilian — the technique handles BR meat cuts well.

Notes
- Fraldinha (skirt steak) is the Brazilian equivalent of US skirt — long, fibrous, intensely beefy. The grain is very visible — slice against it or you get chewy strands.
- Alternative cuts: flank (fraldinha alta), hanger (pelvis / fraldinha), or ribeye if you can splurge. Avoid filet mignon — too lean for this method.
- Par-boiling potatoes: essential — they won't cook through on the sheet pan alone in the steak time. Don't skip.
- Potato variety: batata bolinha amarela (small yellow waxy) is closest to "baby gold." Batata asterix halved works.
- Veg substitutions: asparagus (add at minute 15 of veg roast, not at start — quick-cooking); broccoli florets (add at minute 10); cherry tomatoes (add last 5 min).
- Sheet pan size matters — don't crowd. If too crowded, things steam. Use 2 pans on 2 racks if needed.
- Broiler watch: stand at the oven for the last 2 min. The difference between charred and burnt is 30 seconds.
- Pairing: chimichurri sauce on the table; a glass of Malbec; or just a squeeze of lime.
