Slow-cooking skirt steak in a PVC bag (cook-bag) on the charcoal grill, with butter and herbs.
What I did
- Fraldinha in PVC bag with butter and herbs
- 4 hours on the grill
- Just over midway up (about brick-level 3 of however many)
Result
Nice, falling apart. Quite small after that much time — significant shrinkage. Herb flavour faded by the end.
Next time
- Try higher up on the grill (further from coals) — gentler heat to retain more size.
- Refresh the herbs about 2/3 of the way through (around 2h 40 in a 4h cook). The initial herbs are spent by then; a second handful keeps the flavour live.
- Consider buying a slightly bigger piece to account for shrinkage.
