Ingredientes

200g block of feta cheese (queijo feta — Casa Santa Luzia, Empório Bossa Nova, or block-style at a good cheese counter; not crumbled, NOT the Brazilian "queijo branco" — they're different)
600g cherry tomatoes (tomate cereja) — the small red and yellow mix is prettiest

Baked Feta Pasta

The viral TikTok dish that genuinely deserved its moment. A block of feta sits in a baking dish surrounded by cherry tomatoes, garlic, and olive oil. Forty minutes in the oven and you mash everything together into a creamy tomato sauce — the feta becomes the sauce. Toss with hot pasta. Five minutes of work, twenty minutes of bored waiting, dinner.

Heat: 1/5. From red pepper flakes — easy to omit.

  • Skip red pepper flakes / Calabrian chile entirely

Sub: bottled chiles only

If you have to use bottled: 2-3 drops of Cepera Calabrês on each plate at table. Don't add to the bake — the bottled sauce's vinegar shifts the flavor.

Serving

A green salad with sharp vinaigrette on the side cuts the richness. Crusty bread for any sauce that escapes. Cold rosé or a soft red (Beaujolais).

Notes

  • Feta quality matters. Real Greek block feta (made with sheep's milk, brined) is dramatically better than Brazilian "queijo tipo feta" (often cow's milk, drier, blander). The dish becomes one note with bad feta. Casa Santa Luzia and Empório Bossa Nova in SP carry actual Greek imports.
  • Don't crumble the feta. The block must stay whole during the bake — that's how the texture develops. Pre-crumbled feta dries out instead of melting.
  • The pasta water is the secret to silky sauce. Don't skip the reserved water. Adds starch + salt + emulsifies.
  • Don't overbake. 30 min is right. Past 35 min the feta starts to brown bitterly and lose its creaminess. Set a timer.
  • Variations:
    • Boursin instead of feta: softer, herbier, more luxurious. Same method, less salt needed.
    • Add olives and capers: at step 4, scatter ½ cup pitted Kalamata olives + 2 tbsp capers around the feta. More puttanesca, less basic.
    • Add greens: at step 7 (mashing), wilt 100g baby spinach into the hot sauce. Adds vegetable, balances richness.
    • Add prawns: at the last 5 min of baking, scatter 200g raw shelled prawns over the top. Cooks in residual heat.
  • Freezer-kit version: make the sauce alone (steps 1-7, no pasta), let cool, freeze in 500ml portions. Reheat in a saucepan with a splash of water; cook fresh pasta while it warms. 15-minute weeknight dinner from a frozen sauce portion.
  • Leftovers: the cold sauce is also a brilliant pasta salad dressing — toss with cold cooked pasta + olives + pepper.
