chile flakes (red pepper flakes or Calabrian chile) *(or omit for heat 0)*

50g walnuts, chopped roughly
50g dried cranberries (cranberry seca)

Baked Brie with Honey, Walnuts and Cranberries
The five-minute appetizer that doubles as a casual starter or a dessert-cheese course. A whole brie wheel topped with honey, chili flakes, rosemary, walnuts, and dried cranberries, baked until the cheese melts and the toppings caramelize. Serve with warm sourdough.
Heat: 1/5. Just a pinch of chile flakes — easy to omit.
Serving
Set the dish on the table. Each diner cuts/scoops a portion of melted brie + toppings onto a slice of warm sourdough. Eat immediately.
A glass of crisp white (Sauvignon Blanc, Albariño) or a sparkling rosé.
Notes
- Brie quality. Real French Brie de Meaux or local-produced raw-milk brie gives the best result. Cheap Brazilian "brie" can be dry and rubbery; if that's all you can find, the dish still works but the magic is reduced.
- Score, don't pierce. Shallow cuts on top — too deep, and the wheel collapses.
- Variations:
- Sweet only (no chile): drop the chile flakes; this is the dessert-course version
- Savory: swap cranberries for caramelized onions and chopped sage; serve with crackers as a starter
- Camembert works identically — slightly stronger flavor.
- Make ahead: assemble the topped wheel in the morning, cover, refrigerate. Bake when guests arrive.
- Why not freezer-friendly: you wouldn't freeze brie, but if you somehow had to, freeze the un-topped wheel and assemble + bake from thawed.
