Coq au Vin
Burgundian classic — chicken braised in red wine with lardons, mushrooms, pearl onions, and brandy. The marinade-overnight step is what separates the great from the good. Pressure-cooker shortcut still gets there.
Heat: 0/5. No chile. Pure French.
Notes
- Wine choice matters. A wine you'd happily drink. Vinho do Mercado level — Malbec, Pinot, Chianti, even a robust Côtes-du-Rhône. Avoid sweet wines.
- Pearl onions in Brazil: rare. Substitute with halved/quartered shallots (chalota), or small cebolinhas roxas if you can find them. The shape doesn't matter; the colour-glaze does.
- Lardons / pancetta in Brazil: ask for bacon em peça defumado and dice yourself. The pre-sliced supermarket bacon is too thin. Or use pancetta italiana if Empório Santa Maria stocks it.
- PCC20 P14 Carne at 25 min for skin-on bone-in chicken thighs is enough to be tender without falling-apart. Bigger pieces, +5 min.
- Marinade: the overnight step is meaningful, not optional. If you're rushed, 4 hr is the floor.
- Freezer: excellent — freeze without the croutons and final pearl onion garnish; do those fresh on reheat.
- Croutons are not optional in tradition but are skippable if rushing. The wine-dipped crouton + parsley combo is the signature presentation.
